I need to stock my recipe files with more fruits and veggies. This recipe fits both categories as it includes broccoli and oranges. It seemed to be a strange combination as I was reading the recipe, but not when we tasted it! It was great and we'll definitely have it again. The biggest benefit...it's super fast and easy!
Broccoli with Orange Sauce (MyRecipes)
Ingredients
2 oranges
1 ½ pounds fresh broccoli, cut into florets
1 teaspoon butter or margarine
1 small onion, chopped
2 teaspoons finely chopped crystallized ginger
1 (8-ounce) container low-fat lemon yogurt
Directions
Grate 1 orange to equal 1 teaspoon grated rind; set aside. Peel and section oranges, removing seeds; set aside.
Place broccoli florets in a steamer basket over boiling water, and cook 3 to 4 minutes or until crisp-tender.
Melt butter in a nonstick skillet over medium-high heat; add onion and ginger, and sauté until tender. Remove from heat.

This sounds unexpected but lovely! I love pizza with broccoli and pineapple so I think this might be up my alley!

hmmm... i'm with you, the orange and broccoli combination sounds a little odd... but i can see how it might be good, as i love broccoli salads 🙂
