Here, on Pennies on a Platter, you have seen recipes for Oven Baked Tater Tots and Oven Baked French Fries. I have continued my oven baked potato experimenting and now bring you Oven Baked Potato Wedges. I love the heartiness of wedges over fries and tots. Although, I definitely have to be in the mood for it, because I will prefer regular french fries over any food almost any day! Imagine that craving times 10 when I was pregnant!
These wedges turned out just like I’d hoped…crispy on the outside and still a little soft on the inside. It’s a very simple recipe, and easier than making the fries or tots. Make a bunch at a time and freeze for later use!
Oven Baked Potato Wedges
Preheat oven to 400˚F.
Wash, scrub and dry the potatoes. Cut the potatoes into wedges (I leave the skin on). Toss with olive oil on a baking sheet. Season with salt and desired seasonings. (We love Cajun seasoning!) Spread the wedges on the baking sheet, in one layer.
Bake for 35 to 45 minutes, tossing every 10 minutes.
