Oven Baked Potato Wedges

Oven Baked Potato WedgesHere, on Pennies on a Platter, you have seen recipes for Oven Baked Tater Tots and Oven Baked French Fries.  I have continued my oven baked potato experimenting and now bring you Oven Baked Potato Wedges.  I love the heartiness of wedges over fries and tots.  Although, I definitely have to be in the mood for it, because I will prefer regular french fries over any food almost any day!  :)  Imagine that craving times 10 when I was pregnant!

Oven Baked Potato WedgesThese wedges turned out just like I’d hoped…crispy on the outside and still a little soft on the inside.  It’s a very simple recipe, and easier than making the fries or tots.  Make a bunch at a time and freeze for later use!

Oven Baked Potato Wedges

olive oil
seasonings (optional)

Preheat oven to 400˚F.

Wash, scrub and dry the potatoes.  Cut the potatoes into wedges (I leave the skin on).  Toss with olive oil on a baking sheet.  Season with salt and desired seasonings.  (We love Cajun seasoning!)  Spread the wedges on the baking sheet, in one layer.

Bake for 35 to 45 minutes, tossing every 10 minutes.

  4. Niki-have you actually frozen and thawed and eaten them? I have always heard that you cannot freeze potatoes well (they turn to mush) but I have heard that about lots of other things that I personally have frozen and thawed just fine. Wondering if this was the same way. Thanks!

  5. Roasted potatoes are one of my favorite side dishes! They are so easy and economical. The whole family (even the picky ones) will eat them!

  6. This was a decent recipe. It was a good way to use up the few potatoes I had. Very easy to make.
