Firecracker Pancakes

Firecracker PancakesHappy Independence Day, y’all!  I really wanted to make a few more festive dishes to celebrate the 4th of July this year, but we have been so busy this past month that I just didn’t have time to put anything together that was too involved.  Last night, I had this idea for pancakes whirling in my head, and although my original design didn’t turn out, I thought these ended up cute, instead.  Originally, I wanted the blue pancake to have a red firework in the center, but I didn’t take into account that the griddle would brown it and cover up the firework.  So, I just used my favorite buttermilk pancake recipe, separated the batter into two and dyed one red and one blue (just a drop or two of food coloring, no worries!).  Topped with whipped cream and sprinkles, how can you NOT think of firecrackers!  :)

We are having these tomorrow morning with our friends next door before we head out to another friends’ house to barbecue and responsibly light our own firecrackers.  What are you doing to celebrate?

UPDATE 7/7/12:  When I made these the 4th of July morning, I also stirred some mini chocolate chips into the batter.  YUM!

  1. Hi, Nikki. Thanks for the fun pancake idea! I saw it just before we headed out the door for my kids to ride their bikes in our town’s Independence Day parade. (Yes, they decorated their bikes in red and blue streamers and American flags…so cute!) Hope you had a happy Fourth. We’ll look forward to making Firecracker Pancakes next year! Thanks for the post.

    • I love little kids in parades with their bikes all decorated! We’re making the Firecracker Pancakes a tradition (and actually added chocolate chips this morning, too!) :) Happy 4th!
