Now that I have my homemade yellow cake mix hanging out in the freezer, I've been tempted to throw a scoopful of it in just about everything I'm baking. No worries, I do have my limits! 😉
One of the first things I made with it were these Rice Krispies Treats. Actually, I made these twice this week and I'm sending one of the batches to Ben's class today for his last day of teaching summer Greek. This variation of the original Rice Krispies Treats is a lot of fun for kids (and adults...c'mon, who doesn't love sprinkles??). And, it only takes a few minutes to mix together with just 30 minutes of waiting for the bars to relax and set before digging in. Did I mention you can do all of this on your stove top? No need to turn the oven on in these triple digit temperatures!
I can totally see myself making these every holiday, with the appropriate color of sprinkles! How fun! Have a great weekend!

Cake Batter Rice Krispies Treats
Ingredients
- 3 Tablespoons unsalted butter
- 1 (10 oz.) bag of marshmallows (or 10 ounces of standard sized marshmallows)
- â…” heaping cup dry yellow or white cake mix (boxed or homemade)
- 6 cups Rice Krispies cereal
- â…“ cup (1.75 oz bottle) sprinkles
Instructions
- Lightly grease a 9x13-inch pan with nonstick spray. Set aside.
- In a very large sauce pan, melt the butter over low heat. Stir in the marshmallow and melt while stirring constantly. Once the marshmallows are just about completely melted, remove from the heat and stir in the dry cake mix a few spoonfuls at a time to ensure it blends.
- Mix in the Rice Krispies and combine until coated with the marshmallow. Shake in a few sprinkles at a time, and mix. Add a few more, mix again. Continue this process until the sprinkles are evenly distributed among the Rice Krispies and you use up about ¾ of the sprinkles.
- Transfer the mixture to the prepared dish and gently press into the pan so the top layer is flat and even. Distribute the remaining sprinkles evenly over the top. Wait 30 minutes before slicing into squares. These are best served right away or the same day, but will last a few days in an air tight container.
