All-American Root Beer Float Brownie Sundaes

If you like root beer floats, step it up a notch by adding a brownie base and drizzling caramel sauce over top your ice cream before pouring in the fizzy soda.  You now have single serving desserts perfect for this weekend's holiday cook-out parties!

My parents are visiting this weekend for the 4th of July holiday.  I get nervous every time they drive down here because it is a long drive (13-15 hours, depending on how often my dad decides to stop and stretch his legs).  The older I get, the more I am aware of everything that could potentially go wrong during a 2-day drive, so I try to keep myself as busy as possible and keep my mind off of it.

For example, I have 266 items to tag for an upcoming consignment sale.  Yes, a kids' consignment sale...my first one.  We had our annual neighborhood garage sale a couple weeks ago and I had a TON of baby boy clothes to sell.  Combined with my sister's contributions, we sold pretty much nothing and my prices were CHEAP (like $1 per piece of clothing) and GOOD stuff.  The problem?  Hardly anyone came!

Root Beer Float Brownie SundaesSo, I'm trying my hand at this consignment sale where I will receive 70% of the profits.  I wasn't sure how to price everything, so I basically kept it all at $2 per piece of clothing and then up'd it to $3 or $4 if it was a nicer brand like Gymboree, Baby Gap, etc.  Would you pay these prices?  Too high?  Too low?

It was super easy to enter all of the information (price, description, etc.).  Now I just need to print the tags out on card stock, buy a gazillion hangers and safety pins and get to work hanging and pinning!  That should keep me busy enough to distract me while my parents trek on down here.

Then again, I could wait and let my mom help me pin it all when she gets here...  😉

Root Beer Float Brownie Sundaes

None of that has to do with today's recipe, so let's move on, shall we?  I think you will love this little spin on your typical root beer float.  It's a very easy recipe if you just use a box brownie mix like I did.  Whip up the batter, evenly pour into your jars and bake.  Let cool completely, then add your scoop of ice cream, drizzle with caramel sauce and top with root beer.  Let your kids get involved and help because they will LOVE watching the fizzy bubbles take over!

Grab a straw and a spoon and don't plan to share.  🙂

All-American Root Beer Float Brownie Sundaes

Ingredients

  • 1 family size box (18oz) chocolate fudge brownie mix, plus ingredients listed on box
  • Vanilla ice cream
  • Caramel ice cream topping
  • 3 bottles (20 oz. each) root beer

Instructions

  • Preheat oven to 350 degrees F. Lightly grease six oven-proof jars with nonstick spray; set aside.
  • Follow the instructions on the box of brownie mix to prepare the batter for regular brownies (not cake-like). Distribute the batter evenly into the six jars. (I pipe the batter into the jars using a freezer zipper bag, then cut off one of the corners for easy clean piping.)
  • Set all six jars onto a shallow baking sheet and carefully place in the oven. Bake for 30-40 minutes, until a toothpick inserted in the center comes out fairly clean. Watch carefully as baking times can vary, depending on the size of your jars and thickness of your brownies.
  • Remove from the oven and let cool completely. Cover with plastic wrap until ready to serve.
  • To serve, scoop ice cream into each jar over top the brownies. Drizzle with caramel sauce, then pour in root beer. Serve immediately with a straw and spoon.
