This homemade sage breakfast sausage recipe helped us through our Whole30 compliant diet a few months ago, and we still make it weekly! My kids love it, too!
The day after the Super Bowl this year, Ben and I started the Whole30 diet. This was the first time either of us tried any sort of diet, but we had many friends who did it with great results and success stories so we wanted to give it a try. I’m so glad that we did because by the end of the 30 days we had never felt better!
It was really difficult to get through the month of eating Whole30 compliant meals, because everything you eat basically needs to be homemade. I was right in the middle of my first 8-week clinical rotation, too, so it was exhausting to come home from a full time job and cook every night.
In the mornings, I usually made us a breakfast hash served with a runny egg, avocado, and either compliant bacon or this homemade breakfast sausage. We started looking forward to breakfasts because of this sausage! I buy ground pork from the grocery (for super cheap!) and then quickly mix in the rest of the ingredients. It cooks on the stove-top within minutes and then I can freeze the rest.
Double the recipe for a larger batch if you like! Add in other spices or experiment with other ingredients. Let me know if you have a favorite variation I can try!
(We decided to incorporate as much Whole30 into our regular diet as we can now, but still eat “normal” when we want. As I find time between school and work, I’ll be sharing our favorite Whole30 compliant recipes. But, no worries, I’ll have other normal recipes here and there, too!) 🙂

- 1 lb ground pork
- 1 egg lightly beaten
- 1/2 sweet onion peeled and shredded
- 1 apple - any variety shredded (no need to peel)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3/4 tsp ground sage
- oil or ghee for cooking
Preheat nonstick skillet with oil or ghee over medium high heat.
While skillet is preheating, combine all ingredients in a large bowl. Working in batches (6-8 patties at a time), scoop medium sized patties into skillet and lightly press to evenly form sausages. Cook over medium to medium-high heat for 3-4 minutes on each side until internal temperature is 165 F. Wipe skillet clean and repeat with rest of mixture, heating more oil as necessary.
Makes about 16 small patties.
