Avocado Lime Dip

Friends, this is a quick post, just like this recipe is a quick whipper upper.  See, today (well, yesterday, by the time you read this) is mine and the hubby's 8th wedding anniversary.  I really shouldn't be sitting here at the computer while he is watching episodes of The Middle on Hulu Plus.  😉  We celebrated with one of our dinner faves:  60-cent wings at B-dubs.  Kids were with us.  We really know how to celebrate, huh?  Last year, it was Chick-fil-a.  Ha!

One of my favorite gifts Ben ever gives me for any special day is a homemade card.  He's only made a few, but I received another one for our anniversary and it is absolutely my favorite so far, despite its simplicity.  I'll spare you the deets of the mushy stuff he wrote inside, but check out the cover:

There you have it.  Just like this very simple card made my heart smile, this very simple avocado dip is going to make your tummy happy!  I came up with this recipe when attempting to make a new dressing for a salad.  It was too thick for a dressing, but perfect for a dip.  And, it's healthy!!  I'll be making this so many times this summer that it's possible I'll turn green!  😉

Avocado Lime Dip

Toss just a few ingredients into the blender and you have a healthy and tasty avocado dip.

Ingredients

  • Half of one avocado , peeled, pitted and chopped
  • ¼ cup Greek yogurt
  • Juice from 1 lime
  • Pinch of salt
  • Dash of black pepper

Instructions

  • Place all ingredients in a blender and process until fully combined and smooth. Stop the blender and scrape down the sides of the bowl as necessary.
  • Serve immediately with chips, pretzels, veggies, etc.

    OH MY GOODNESS! That card is the best. Your anniversaries sound like ours...nothing extravagant, just happy to be together, and thankful for our family. B-dubs sounds like my husbands dream anniversary date.

      Glad we're not the only ones who have low-key celebrations. I think we're just waiting for the 10-year...and hopefully take a big trip? Or, maybe we'll just be at B-dubs again. 😉
