Chicken Nachos

Chicken, chicken, and more chicken. What can I say, chicken was on sale. So, the day after eating our Chicken Pesto Pizza, we still had some more to use. Bonus…I didn’t have to go to the grocery store.

Another bonus to that evening was Ben actually came up with what to have for dinner! This is not a regular or common occurrence! He said “let’s put the chicken on tortilla chips with the salsa.” I think he even actually said it like that… but I knew exactly what he meant.

I took some tortilla chips we had on hand, spread them on a shallow baking sheet and warmed them for 5-10 minutes in a 300 degree oven. Meanwhile, I cooked the chicken on a skillet in olive oil and flavored with salt, pepper, cumin, and chili pepper.

Once the chips were ready, I pulled them out of the oven and spread the diced chicken over top along with salsa, sour cream, queso and shredded lettuce. If I had more on hand, I would’ve added more toppings. You can pretty much do what you want with this one.
