Chocolate Chip Brownie CookiesOnce in a while, our neighbors come over to watch a movie with us after they put their seven kids to bed. (Yes, you read that right, seven!)  Sometimes they bring us chocolate milkshakes, other times I have a little snack for us to feast on.  A few weeks ago, though, it was such a last minute decision that I wasn't sure what to serve for food.  Even so, I let myself say "I'll make cookies!"

Problem: They were coming over in approximately 10 minutes.

Another problem: I was out of butter. WHAT!?

This was when a box of brownie mix came to my rescue.  I couldn't make brownies, because they take like 45 minutes to bake, so I decided to try and turn the mix into cookie batter.  Turns out, adding just a little bit of flour to the mix and some chocolate chips did the trick.

That sounds like a clever plan and it looks like it worked. 7 kids? (Shakes head in bewilderment.)
