Graduation Cupcake Tower

We're back from our vacation and now I need to catch up on some posting! Hilton Head was awesome and it was definitely hard to leave... but now it's back to reality.

The reason we took this vacation was to celebrate Ben's graduation. He finished his doctorate in Biblical Theology at Wheaton College that he's been working on for four years. We were planning this vacation for a long time.

Ben graduated May 10, and that evening we held a party at our home. About 40 guests attended for an evening cook-out of make your own hot dogs and hamburgers. I made posters with ideas of different types of burgers or hot dogs they could put together, such as Chicago Style Hot Dogs, Mexican Hot Dogs (wrapped in torts), Hawaiian Burger, BBQ Burger, etc.

I think the food highlight of the night, though, was the cupcake tower. Ben wanted me to make cupcakes instead of a cake. Since we had quite a list of people attending, I made a lot of cupcakes and had to get creative on making a tower for the display. It turned out that I had everything on hand to construct this tower and just had to borrow the top portion (which was an actual cupcake tower) from my dear friend, Laura. The rest of the tower consists of my lazy susan, two plastic platters, my cake pedestal, and my cake decorating turn table.Originally, I wanted to decorate the cupcakes with something creative and fun...putting my newly learned cake decorating skills to use. But, because I was hosting 14 overnight guests in our home for the weekend, I was too exhausted to put much effort into the decorating. So, they have the traditional "slab" of frosting.

I made a few different types of cupcakes that I'll post the recipes for later this week. Right now I need to finish the laundry and get to bed so I'm fresh for my first day back at work tomorrow.

By the way... Happy Memorial Day!
