Mint Chocolate Chip Ice Cream

So I posted my Mint Chocolate Chip Ice Cream CAKE, but now I'm going to tell you how to make just the ice cream! If you do not have an ice cream maker, then stop now and run to the store and pick one up before reading on... 🙂

Mint Chocolate Chip Ice Cream

Ingredients

¾ cup sugar
1 cup milk
2 cups heavy cream
2 tablespoon peppermint extract
1-2 cups mini semi-chocolate chips

In a medium bowl, whisk together the sugar and milk for about 2 minutes. Add the cream and pepperment. Turn on the ice cream maker and pour mixture into the bowl as it's churning. After 20 minutes add the chocolate chips (while still churning) and let churn for an additional 5 minutes.

Eat immediately while still soft, or pour into freezer proof container and let freeze for 2 hours for flavors to spread.

You can play around with the amount of chips and extract you use. Also, I add green gel food coloring right before adding the chocolate chips for a bigger effect!
