Mississippi Mud Cake 3It didn't take me long to learn how to spell Mississippi when we moved here.  Okay, I already knew how to spell it, but it took some time to stop me from reciting "M-I-crooked letter, crooked letter, I-crooked letter, crooked letter, I-humpback, humpback, I."  And, I'm not talking about some silly rap song.  This is the way I was taught to spell Mississippi in elementary school.  How about you?

Anyhow, when I saw this recipe listed in my new Paula Deen's Southern Cooking Bible, I knew it had to be one of the first recipes I tried.  I've always heard of Mississippi Mud Cake (and Pie) but never experienced tasting one.  Plus, what a more fitting title?

Mississippi Mud Cake 4This is a great party or pot luck cake.  It doesn't take much effort to throw together, and it serves a crowd, depending on the sizes of the serving slices.  You can serve it completely cooled to room temperature, or throw each slice into the microwave, like I do, for 15 seconds.  Paula suggests the completely cooled route, but I'm such a sucker for melt-in-your mouth warm chocolaty cake.

Mississippi Mud CakeOh, and to cut the pieces into circles as pictured, no fancy tools are needed. Just grab a round glass and dig away! 🙂

Mississippi Mud Cake

Ingredients

For the cake:

  • 1 ½ cups all-purpose flour
  • 1 ½ cups sugar
  • ¾ cup unsweetened cocoa powder , sifted
  • 1 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup whole milk
  • 8 Tablespoons butter , melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups mini marshmallows

For the glaze and topping:

  • 1 cup pecan halves
  • ¼ cup heavy cream
  • ¼ cup light corn syrup
  • ½ cup chopped semisweet chocolate
  • ½ cup shredded sweetened coconut

Instructions

  • Preheat the oven to 350 degrees F. Grease a 13- by 9-inch baking dish with cooking spray.

For the cake:

  • In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt. In a medium bowl, whisk together the milk, melted butter, eggs, and vanilla. Using a rubber spatula, fold the milk mixture into the flour mixture just until combined. Pour the batter into the prepared pan. Bake until a toothpick inserted into the center of the cake comes out clean and the cake is firm to the touch, 30 to 40 minutes.
  • Remove the cake from the oven and evenly scatter the marshmallows over top. Return to the oven for 5 minutes to melt the marshmallows.

For the glaze:

  • Reduce the oven temperature to 325 degrees F. Spread the pecans on a baking sheet and bake until fragrant, about 10 minutes. When cool enough to handle, coarsely chop the pecans.
  • In a medium saucepan, combine the cream, corn syrup, and chocolate. Stir over medium-low heat until the chocolate is melted. Pour the chocolate mixture over the top of the cake. Top with the pecans and coconut. Let cool completely before serving. (Or, serve warm if you're so inclined...) 🙂

    I have always lived in the South, but have traveled all over, and I'm always glad to get home to our GREAT Southern food, the best in the world, and our Paula Deen is Queen of Southern food. TOO many favorites, but cheese grits with jalapeños go with any meat or seafood, and you can change the cheese for variety (I like Fontina or Extra Sharp cheddar). Everybody loves it and I serve it often.

    I know this is "last minute", Nikki, but my favorite southern dish has everything to do with corn: piping hot grits with butter and salt and pepper, cornbread the way I remember it from growing up in the south, moist and thick with that slight crunch, and corn on the cob, cooked just enough to be tender yet juicy and seasoned with a tad of butter and generous sprinkling of salt!

    One of my favorite and most memorable southern foods is thin, crispy fried cornbread (I believe Paula calls then "hoecakes") served with a healthy drizzle of molasses for dipping. My grandmother used to make it just about every Saturday when I was young (I'm 25 now), served with fatback and stewed potatoes (cooked with a respectable size spoonful of bacon grease....bacon grease makes EVERYTHING taste better!) Even my boyfriend who was born and raised in Malaysia loves the stuff!

    Nikki, your photos of this cake are just gorgeous. And I am so with you on the warm, gooey cake. Delish! I grew up with lots of Southern foods, so choosing just one is quite tough. I just can't decide, it's either got to be red velvet cake or fried okra. What a combination!

    My favorite southern dish I've had was at Lambert's ten years ago. They made this side dish of macaroni noodles, stewed (I think) tomatoes and some sugar. It may not sound all that great, but it was totally addictive!

    My favorite southern dish would have to be biscuits. Perhaps a simple choice, but biscuits aren't always done right. However, when you get a perfect flaky biscuit, one that's buttery and fluffy, it's heavenly.

    Since I live in Louisiana, my favorite Southern recipes are seafood recipes, Shrimp Creole, Crawfish Etouffe, Eggplant Casserole with Shrimp, etc., but my all time favorite is a shrimp stew that i adapted from a cookbook called LaBouche Creole.

    Hands down, any time, any where, I want pecan pie. When I was growing up, we had a pecan tree in the yard (Temple TX) and my dad would pick pecans and have my mom make pecan pie. That dessert is one of my favorites!!!

    When I was a little girl, my neighbor would take part of the bread dough that was rising, fry it in lard, and then we dipped it in fresh churned butter mixed wit,h syrup. I ate that nearly every Saturday morning growing up...How am I still alive?!!

    When I was a little girl, every Saturday morning, my neighbor would fry bread dough in lard, and then we would dip it in fresh churned butter and syrup. I still think about those days...how am I still alive?!!

    Biscuits and gravy! My dad used to make it with bacon fat...yummy! He died several years ago, and I just recently tried my hand at it...mine was good, but not as good as Dad's!

    Well I'm a southern girl born, bred, and in my heart so to pick just one is impossible. I definitely love pecan pie, anything red velvet, and pretty much all sweets lol. I love proper southern fried potatoes. Greens with some apple cider vinegar. Oh I know! I don't know if its considered southern but I love true Carolina style pulled pork bbq. And Brunswick stew. Oh boy I could go on for days lol

    Oh my goodness that is the same way I learned to spell
    Miss-iss-ipp-i!
    My Aunt was raised in Mississippi and my Uncle was from Florida so when we would go to there home to visit you knew you would be eating something with a southern flair. 40 years later...
    The meal I remember when we visited them was Breakfast, grits with a fried egg on top.
    To this day I have not been able to get my kids to try it...even with a drop of maple syrup on top.
    Silly kids.

    I have learned to love okra. It is so good in soup, first time I had it was driving through the south on the way to Florida. It is an unknown vegetable in most cookbooks and a rarity to find fresh in my grocery store.

    I love my Southern grandma's cornbread. Southern cornbread is made in a cast iron skillet, and it's not sweet, just crisp and delicious.

    I may be a northerner but I love Biscuits & Gravy and Country Fried Steak with Mashed Potatoes and Gravy. I learned a really good side from a wonderful Southern cook of fried green beans in a little bacon fat and some sugar topped with some bacon. Thanks for the chance to enter.

    My favorite southern dish is greens - collard, mustard, turnip..doesn't matter which one - slow cooked with bacon and turnips in it and cornbread on the side.(can you say run-on sentence?) My Grannie made this all the time and I was the only grandkid who would eat "that green stuff"! I've tried to recreate her recipe and I'm getting close. I wish I had asked her and written down her recipes. I miss my Grannie!!!

    That's REALLY hard to narrow down, I'd have to say fresh, sweet cream corn in the middle of summer served with black eyed peas (cooked with salt pork) and cornbread (cooked with bacon grease). It's good we had a short winter here in MS, I think I'll be eating this earlier than usual this year!

      I agree! It is hard to beat extra crispy fried chicken with honey and hot biscuits! A plate of fresh peas cooked with a slice of ham, turnip greens with chunks of turnips and ham hocks, fried pork chops with mashed sweet potatoes, hot water cornbread and lots of sweet tea. Dessert? Homemade ice cream on peach cobbler! A couple hours later, of course! LOL

    Hi! I was so happy to read your post. I too am from Mississippi and have lived there all my life. How we learned to spell MS in elementary school is soooo true. I was just telling my husband that a few days ago and he laughed at me. I am from Oxford, MS. Where are you from?

    My favorite southern dish is from a local restaruant called Ajax that serves the best country fried steak with fried okra and chicken and dumplings. It cannot get better than that!
