Nutella Peanut Butter Chewies

For just the year and a half that we lived in Southern California, I picked up some really delicious recipes!  One of them was from a sweet friend for flourless peanut butter cookies that you couldn’t stop eating.  This recipe is based off of that.  I thought I could just add some Nutella to the mix and end up with the same consistency of cookie, but instead these turned out nothing like cookies and everything like chewy pieces of heaven.

Don’t be fooled.  They look like cookies, yes, but when you bite into them they are thin and airy, with a crispy outer crust and chewy center.  Interesting, I know.  You’ll just have to make them and see for yourself!

Crispy. Chewy. Melt-in-your mouth "cookies".
Servings: 2 dozen
Ingredients
  • 1/2 cup Nutella (or chocolate hazelnut spread)
  • 1/2 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 egg
  • 1 teaspoon vanilla
Instructions
  1. Preheat oven to 375 degrees F. Line baking sheet with parchment paper.
  2. Mix all ingredients in a medium bowl. Scoop round tablespoons onto baking sheet. Bake for 8 minutes. Let cool on wire rack.

    I love and read your blog since – I don’t know – 2010/2011 and never posted before. But THERE delicious chewies must be recognised 😉

    I will make them for me and my dad and I will try to make the with nutella and almond cream for my girlfriend.

    Anyway, these look pretty magical. I’ve tried something similar and wasn’t impressed but there wasn’t peanut butter involved. That changes everything!

    These definitely look super chewy! Those are my favorite cookies – soft and chewy in the center. I looooove the combination of nutella and peanut butter. Just sounds so decadent and sinful – awesome cookie combo 😉

      Hi Alli,

      I’m sorry, I have no ideas for a peanut butter substitute since I haven’t tried any, myself. Maybe another reader can pitch in their thoughts? I know Jif just came out with new cashew butter and almond butter, if he doesn’t also have nut allergies and only peanut allergies? But, the resulting consistency of the chewies could be different…

    I am currently making these and I was wondering if anyone else came upon the fact that the oil oozes out of them from the pb and made soggy yucky cookies. So I added some oatmeal. Still oozing out. Anyone have this happen?

      Sorry you are having problems! Did you use natural peanut butter? I’m guessing if you did, that might be why you’re having problems with the oil…

      I also used natural peanut butter. But I added 2/3 cup of flour after reading your comment. They turned out great. I’m sure they are more dense than they should be but, they taste GREAT.
