Through my years of blogging and cooking, I've learned that we all really like quick meals. We are always searching for something fast and easy, and during our very hectic lives - that are getting even busier - it is a bonus to have a fast meal ready.
One of the ways I like to get a meal prepared in just minutes is to offer leftovers from a previous dinner. I know, I know. Some of you out there (some of my close friends, even) curl your noses at the thought of leftovers. But, people, you really should change your hearts. For one, you're wasting so much food if you just throw it out. And, two, leftovers are sometimes (let me stress sometimes) even better!
For years after we were married, we used a toaster oven to heat up our leftovers. Have you tried it? Do not use a microwave! (Unless you like the mushy factor.) You can use your conventional oven, but it takes more time and more energy source. Plus, in Mississippi I really don't like when my oven heats up my entire kitchen in the HOT summer!
