Quick Fix: Spinach Salad with Cranberries, Mandarin Oranges & Pecans

Spinach Salad with Cranberries, Mandarin Oranges & Pecans

The title of this post pretty must sums up the recipe. We were invited for dinner at our friends' the other night. I asked what I could bring. She told me 'nothing' and, of course, I insisted, so she said 'salad'. 🙂 She mentioned she was making pork, so I asked some gals on a cooking board I frequent what kind of salad they thought would go well with pork. The common response was 'spinach salad'.

I had everything but the spinach on hand already.  So, on grocery day I picked up the spinach, and then on the day of the dinner all I had to do was throw everything in the bowl and mix it up.  Quick and easy!

Measurements are left up to your own taste.  You can also improvise any of the ingredients to your liking.  There are so many ways you can make a spinach salad...I'll leave you with mine:

Spinach Salad with Cranberries, Mandarin Oranges & Pecans

Printable Recipe

baby spinach leaves
dried cranberries
canned mandarin oranges
chopped pecans
freshly grated Parmesan
balsamic vinaigrette dressing

Toss all ingredients in a large bowl and serve with the dressing on the side.

    Love spinach salads. My babygirl and I make one with warm bacon vinaigrette (homemade), blue cheese, and toasted pecans. What makes it even better is my daughter and I making it together.

    We love this salad in our house. I often use Gorgonzola instead of the Parmesan, and raspberry vinaigrette is lovely with it.
