1(20 oz.) loaf white bread, cut into 1-inch cubes (the less fresh, the easier to cut)
1cup(2 sticks) unsalted butter, melted
Instructions
Preheat oven to 375 degrees F. Lightly grease a 9x13 or 3 quart baking dish.
In a very large mixing bowl, whisk together the eggs and sugar until light. Mix in the vanilla (optional). Stir in the crushed pineapple and salt. Gently fold in the bread cubes. Pour melted butter into the bowl and mix until coated. Transfer to the prepared pan. Bake for 45 minutes, until browned.

Notes
Serve hot, warm or at room temperature for breakfast, side dish at dinner, or dessert (warm with ice cream on top). This dish is very versatile! Easily halved.
