Ingredients
5Roma tomatoes, seeded and diced
1heart of Romaine lettuce, chopped small
2garlic cloves, peeled and grated
¼cupseeded and diced green bell pepper
2Tablespoonspeeled and diced red onion
2large ripe avocados, peeled, pitted and thinly sliced (not too ripe)
3Tablespoonsextra-virgin olive oil
2Tablespoonsfresh lime juice
1teaspoonground cumin
½teaspoonsalt
¼teaspoonpepper
3Tablespoonschopped cilantro leaves
Instructions
In a large bowl, toss together the tomatoes, lettuce, garlic, green bell pepper, onion and avocado; set aside. In a small bowl, whisk together the oil, lime juice, cumin, salt and pepper. Stir in the cilantro, then drizzle over the salad bowl. Toss lightly to coat. Serve immediately.
