Peanut Butter Cup Blondies
These Peanut Butter Cup Blondies have JUST the right amount of peanut butter flavor. They are gooey and yummy cookie bars with chopped peanut butter cups mixed in. The PERFECT dessert for your chocolate peanut butter craving.

- 1 cup brown sugar
- 6 tablespoons unsalted butter at room temperature
- 1/3 cup peanut butter creamy or crunchy
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup chopped peanut butter cups
Preheat oven to 350°F.
Line bottom and sides of 8x8-inch pan with foil. Lightly grease with nonstick spray; set aside.
In a large mixing bowl, beat the brown sugar, butter and peanut butter for one minute, until smooth. Add the egg and vanilla. Beat on high for 2 minutes.
In a small bowl, whisk together the flour, baking powder and salt. Gently mix into the wet batter on low speed. Fold in 3/4 cup of the chopped peanut butter cups.
Pour the batter into the prepared pan and use a spatula to spread evenly. Sprinkle the rest of chopped peanut cups over top.
Bake 25 minutes or until set in the middle. Remove from oven and cool before slicing and serving.
Recipe Tip: Place peanut butter cups in freezer or fridge so they are cold and do not melt while chopping.
