Ingredients
1cupbrown sugar
6tablespoonsunsalted butterat room temperature
⅓cuppeanut buttercreamy or crunchy
1largeegg
1teaspoonvanilla extract
1cupall-purpose flour
½teaspoonbaking powder
¼teaspoonsalt
1cupchopped peanut butter cups
Instructions
Preheat oven to 350°F.
Line bottom and sides of 8x8-inch pan with foil. Lightly grease with nonstick spray; set aside.
In a large mixing bowl, beat the brown sugar, butter and peanut butter for one minute, until smooth. Add the egg and vanilla. Beat on high for 2 minutes.
In a small bowl, whisk together the flour, baking powder and salt. Gently mix into the wet batter on low speed. Fold in ¾ cup of the chopped peanut butter cups.
Pour the batter into the prepared pan and use a spatula to spread evenly. Sprinkle the rest of chopped peanut cups over top.
Bake 25 minutes or until set in the middle. Remove from oven and cool before slicing and serving.
Notes
