Ingredients

  • 1 1/2 to 2 lb thin pork chops about 7 to 8 pork chops, fat trimmed
  • 1 teaspoon olive oil plus 2 tablespoons for skillet
  • 2 eggs
  • 1 cup almond flour
  • 1 1/2 teaspoon ground sage
  • 1 1/2 teaspoon paprika
  • 1 teaspoon ground mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  • Trim fat off pork chops using kitchen shears; set aside.  Heat 2 tablespoons olive oil in skillet over medium to medium high heat.
  • Whisk together the eggs and 1 teaspoon olive oil in a shallow rimmed dish.  In a separate shallow dish, combine the almond flour and rest of the ingredients.
  • Working with two or three pork chops at a time, dip the pork chops into the egg mixture to coat, then into the flour mixture.  Turn a couple of times to thoroughly coat each side.
  • Place coated pork chops directly into the skillet and cook for 3 to 4 minutes on each side until reaches internal temperature of 145°F.
