Easy Mexican Corn Salad

  • 1/4 cup mayonnaise
  • 2 cloves garlic , minced
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 2 stalks green onion
  • 3 (15 oz) cans whole kernel corn, drained
  • Juice from 1 lime
  • 1 avocado , peeled and diced
  • 3 oz. Cotija cheese, finely crumbled (or Feta cheese)
  • 1 handful cilantro leaves , chopped


  • In a large bowl, whisk together the mayonnaise, garlic, salt and chili powder. Mix in the rest of the ingredients. Chill for 1 hour before serving.
