Ingredients
2tablespoonsbutter
1cuppeeled and diced sweet onion(about ½ medium onion)
1cuppeeled and sliced carrots(about 2-3 medium carrots)
1cupdiced celery(about 3 celery stalks)
2clovesgarlicminced
10cupschicken broth, more to taste
12oz.wide egg noodles
3cupsshredded cooked chicken, can use from a rotisserie chicken
Salt & pepper, to taste
Instructions
Heat butter in a large pot or dutch oven. Add onions, carrots and celery. Cook over medium heat for 7 minutes, tossing frequently. Add garlic, cook 1 more minute.
Pour in the broth and bring to a boil over high heat. Once boiling, stir in the noodles and cook uncovered for 10-12 minutes.
Add chicken and heat until warmed. Season with salt and pepper, to taste.
Serve immediately. Store leftovers in the fridge for 5-7 days, or freeze for up to 6 months.
Notes
Add more flavor with additional optional seasonings such as bay leaves, fresh thyme, and oregano.
