Ingredients
3tablespoonsunsalted butter
¼cuphoney
⅓cuplight brown sugar
1teaspoonvanilla extract
2 ½cupsquick 1-minute oats, not instant
¼cupchocolate chips
Instructions
Butter the bottom and sides of an 8x8-inch baking pan, then line with parchment paper. (The butter is to help the parchment paper stick to the bottom and sides of pan.) Set aside.
Melt the butter in a large sauce pan over medium heat. Stir in the honey, brown sugar and vanilla. Whisk frequently until the sugar is dissolved, do not over cook. Remove from heat. Mix in the oats with a wooden spoon. Stir for 3 minutes.
Spread the mixture into the prepared baking pan. Quickly press the chocolate chips over top.
Refrigerate 30 minutes. Slice into 12 bars. Store in a sealed container at room temperature for up to 1 week.
