Ingredients
1cupunsalted butter, room temperature
1cuppeanut butter
1cupbrown sugar
1cupgranulated sugar
2eggs
1cupflour
½teaspoonbaking powder
1teaspoonbaking soda
¼teaspoonsalt
1cupoatmeal
1cupchopped nuts
1cupsemi-sweet chocolate chips
1cupraisins
1cupshredded coconut
Instructions
Preheat oven to 350 degrees F.
In a mixing bowl, beat together the butter, peanut butter and sugars until light and creamy. Add the eggs one at a time.
In a separate bowl, whisk together the flour, baking powder, baking soda and salt. Slowly mix it into the wet ingredients until just combined. Stir in the oatmeal, then the nuts, chocolate chips, raisins and coconut.
Drop tablespoons of the dough onto an ungreased cookie sheet and bake for 10 to 12 minutes.
