Ingredients
8cupsRice Chex cereal
¼cupunsalted butter
1bag(10 oz.) large marshmallows
2cupssemi-sweet chocolate chips
White icing for decoration
Instructions
Grease a 9x13-inch baking dish with cooking spray; set aside. Pour cereal into a large mixing bowl; set aside.
In a large pot, melt the butter over medium low heat. Add the marshmallows and continue to heat over medium to medium low until completely melted, stirring frequently.
Immediately pour the marshmallow mixture over top of the cereal in the bowl and mix until evenly coated. Press the mixture into the greased pan in an even layer. (Use greased waxed paper to help press the mixture into the pan.) Let cool 15 minutes.
Meanwhile, melt the chocolate chips in a medium sized microwave safe bowl -- 30 seconds at a time until melted. Pour over the cooled cereal mixture and evenly spread. (It will be a thin layer.)
Refrigerate for 30 minutes or until set. Cut into bars, 4 rows by 5 rows. Add decorative football stripes with white icing (optional). Serve at room temperature.
