Ingredients
2cupscauliflower pearls(or grated cauliflower)
3Roma tomatoes
3green onionschopped thin
½cucumberdiced
2garlic clovesminced
1bunchflat-leaf parsleywashed and dried, finely chopped
½ouncemint leaveswashed and dried, finely chopped
⅛teaspoonground cinnamon
½teaspoonallspice
¼teaspoonsalt
¼teaspoonblack pepper
Juice from 1 lemon
4tablespoonsgood extra virgin olive oil
Instructions
Place the cauliflower, tomatoes, onions, cucumbers, garlic, parsley and mint in a large bowl.
Season with the cinnamon, allspice, salt and pepper. Drizzle with the lemon juice and olive oil.
Toss until evenly coated. Adjust seasonings to your taste. Serve immediately or refrigerate up to 1 day.
