Using a vegetable peeler, partially peel the cucumber so it's striped. Use a cheese grater to grate or shred the cucumber.
Strain the cucumber from all liquid by squeezing it over the sink inside good paper towels or a cheesecloth. You can also just use your hands (what I do), but it takes a little longer. Strain it as much as possible!
Combine the cucumbers and the rest of the ingredients in a mixing bowl.
Cover and refrigerate for at least 1 hour before serving. Store in the fridge for up to 1 week.
