Ingredients
For the meatballs:
1lblean ground beef
1egg, lightly beaten
2green onions, chopped fine
½teaspoonsalt
¼teaspoonblack pepper
2tablespoonscoconut flour
For the sauce:
1cup100% grape juice
8oz.can tomato sauce
6-8Medjool dates, pitted
¼cupapple cider vinegar
2tablespoonstomato paste
3garlic cloves, minced
1teaspoondry mustard
1smallyellow onion, chopped
½teaspoonsalt
½teaspoonhot sauce
¼teaspoonblack pepper
Instructions
For the meatballs:
Preheat oven to 400°F.
Mix meatball ingredients in a large bowl. Roll into 1 ½-inch balls and place on baking sheet. Bake for 15 minutes, or until done.
For the sauce:
Meanwhile, combine all sauce ingredients in large saucepan. Bring to a boil over high heat and cook 2 more minutes, stirring frequently.
Turn heat down and simmer for 10 minutes, until thickened. Stir occasionally.
Carefully transfer sauce to blender or food processor. Blend into a puree, until smooth.
Combine meatballs and sauce. Serve over rice. (Cauliflower rice for Whole30.)
