Ingredients
6russet potatoes, washed and dried
3teaspoonsolive oil
salt, to taste
Instructions
Crinkle loose foil balls into bottom of crock pot.
Prick washed and dried potatoes with fork. Rub ½ teaspoon olive oil on the skin of each potato. Place on top of the foil in crock pot.
Cook on low for 6 to 8 hours, or on high for 3 to 5 hours until soft. Optional: Remove cover 30 minutes before serving to allow skins to crispen.
Serve as a side with butter and salt, or as a loaded baked potato meal with bacon, cheese and sour cream. Or, blend with heavy cream and butter and salt for mashed potatoes.
