Penny Pincher: Use What You Have on Hand


We are all guilty of looking over those food items that are soon to expire in our fridge or cupboard.  Instead, we covet that which we don’t have and run to the grocery store in order to get the items we need to make a certain recipe.  Then, we forget about that soon-to-expire food until it’s time to clean the kitchen and throw away all the wasted goods.

This blog is a reminder for you and for me, to use up what you buy and don’t waste it.  I’m not going to go on a “other people out there are starving so you should be grateful for the food you have” tangent, but I will tell you that we can all save a little more money by using our resources a little more effectively.  This includes spreading the food you buy out for various uses.

Yesterday, for lunch, I was able to combine the leftovers from the Cheesy Potatoes I made for our small group dinner with some sandwich ham that was going to expire within the next two days.   I tore the slices of ham into squares, laid them in mini muffin cups then spooned in the potatoes.  Crushed Ritz crackers was the perfect topping.  Then, I baked it in a 350 preheated oven for 15 minutes and voila!..lunch was served!

I could have easily ran to the grocery store to buy something else to eat, or to a nearby restaurant, but my conscious was telling me to save money.  And, with the downward spiraling state of our economy in mind, I thought I should only remind all of you that leftovers can be delicious and money-saving.

  1. What a great idea! It’s so cute, simple, and makes a great appetizer.

    Isn’t it nice to doctor up leftovers into something completely new? I get so sick of eating the same leftovers for days!

  3. Ya’ll, try this.

    Open a can of biscuits, flatten each biscuit out and make a ‘biscuit bowl’ in a muffin tin. Mix leftover mashed taters with cheese, ham, veggies (whatever you have) and plop a generous spoonful into the biscuit cup. Bake until the biscuit is golden brown.

    It’s a hit here in Texas.
