Patriotic Pops

Patriotic PopsLooking to cool off this holiday weekend?  I think these festive popsicles will do the trick!  Ben was excited to have one of these icy treats when he came home from golfing in 110-degree temperatures.  After each bite, he kept remarking how good it tasted.  I’m sure he wasn’t just speaking from heat delirium, because I also enjoyed mine and so did Judah.

What may seem like three obvious layers to these pops may surprise you.  The blue is not so revolutionary and is what you would assume, blue Kool-aid.  However, the middle white layer is a mix of yogurt and whipped cream, while the red layer is a homemade strawberry beverage.  But, you can use just about any red colored drink you’d like, including red Kool-aid.

These are fun and easy to make.  You can choose whichever type of popsicle mold you like, or do what I did and use disposable cups and craft sticks.  Kids and adults alike will love cooling down with these at your hot Fourth of July party!

Yield: 12 Popsicles

2 cups blue Kool-aid (or blue drink of choice)
1 cup whipped cream
1 cup vanilla yogurt
2 cups red Kool-aid (or red drink of choice)
12 (5 oz) disposable cups
12 wooden craft sticks

Pour about 1/4 cup of the blue drink into each of the 12 disposable cups.  Freeze until partially frozen, about 30-45 minutes.

In a small bowl, mix together the whipped cream and yogurt.  Equally divide the yogurt mixture among the cups.  Add a craft stick to the center of each cup and return to the freezer for another 45 minutes.

Remove from the freezer and pour 1/4 cup of the red drink into each cup, on top of the yogurt mix.  Freeze until solid.

Run briefly under warm water to remove the popsicles from the cups.
