These were served to us at the DOLE® Summit last month, and I wanted to share the recipe with you because I loved it so much. Simple and quick, using pineapple juice and apricot nectar. Make it a non-alchoholic drink by using sparkling cider instead of the wine. It’s the perfect, refreshing drink for brunch!
Pineapple Apricot Bellini
- 1 cup sparkling white wine or sparkling cider
- 1/2 cup DOLE® Pineapple Juice
- 1/2 cup apricot nectar
Stir all of the ingredients in a large pitcher. Pour into champagne flutes and serve.
