Bacon Wrapped Cocktail WeeniesWe have only a little over a week before we move to Mississippi, yet instead of being at home packing things up, right now I am in Colorado visiting family for the holidays.  (A trip that was planned before we knew we were moving the first week in January.)  You might say that I am indeed a little stressed, but being with my sister and snuggling with her new baby boy is all the therapy I need.  🙂

It's possible that these bacon wrapped weenies are suitable as a stress remedy, too.  Really, anything with bacon in it can lift me from any of my worries (except a future heart attack), and wrapping it around my favorite lil' smokies then sweetening them up with sprinkles of brown sugar really pushes its mending abilities to the top.

Bacon Wrapped Cocktail Weenies2These are simple to put together and would be a popular addition to your New Years' Eve spread.  They do take a little bit of time because, of course, you need to wrap each sausage with a slice of bacon.  This recipe also includes additional steps of heating in a skillet and broiling a few minutes, to ensure a crispier outcome.  In my opinion, this little bit of sacrifice of time is way worth it for the fabulous results.

Bacon Wrapped Cocktail Weenies

Ingredients

  • 14 oz package cocktail sausages ("Lil' Smokies")
  • 12 slices bacon
  • Brown sugar , to taste

Instructions

  • Preheat oven to 350 degrees F. Line a rimmed baking sheet with foil and lightly spray with cooking oil.
  • Cut the bacon into thirds. Tightly wrap a third of a bacon slice around one sausage, and place it onto the prepared baking sheet, seam side down. Repeat with remaining bacon and sausage. Make sure the bacon wrapped sausages are lined in one layer on the baking sheet. Bake for 20-25 minutes.
  • Remove the sausages from the oven and transfer to a large skillet. Heat over medium-high heat until the bacon is crispy. Sprinkle a couple of tablespoons of brown sugar on top and toss to evenly coat. Transfer to an oven safe serving dish and place under the broiler until the sugar is bubbly. Serve hot, warm or at room temperature. Provide toothpicks for easy serving.
  • Recipe Note: Instead of crisping the sausages in the skillet after baking, you can also bake them for a longer time at a higher temperature, while sprinkled with brown sugar. Just keep your eye on it and remove from oven when they reach your desired crispiness. (They do crisp up a little more as they set, as well.)
