Blueberry Crumb Bars

These blueberry pie bars are an easy dessert for blueberry lovers! Loaded with fresh blueberries, these bars capture all the flavors of classic blueberry pie with its buttery crumb topping.

Ingredients

For the crumb:

  • 1 cup granulated sugar
  • 3 cups all purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • Zest of 1 lemon
  • 1 cup cold unsalted butter cut into small pieces
  • 1 egg

For the berries:

  • Juice of one lemon
  • 4 cups fresh blueberries
  • ½ cup white sugar
  • 4 teaspoons cornstarch

Instructions

  • Preheat the oven to 375 F. Grease a 9×13 inch pan.
  • In a large bowl, stir together 1 cup sugar, 3 cups flour, and 1 teaspoon baking powder. Mix in salt and lemon zest. Use a fork or pastry cutter to blend in the butter and egg. Dough will be crumbly. Pat half of the dough into the prepared pan.
  • In a medium bowl, stir together the sugar, cornstarch and lemon juice. Gently mix in the blueberries. Sprinkle the blueberry mixture evenly over the crust. Crumble remaining dough over the berry layer.
  • Bake in the preheated oven for 45 minutes, or until the top is slightly browned. Cool completely before cutting into squares.

Notes

  • Can also serve warm out of the oven as a cobbler with ice cream.
