Cinnamon French Toast

We had some leftover country bread that needed to be used soon or it would go bad.  I toyed with the idea of making bread pudding, but instead, had a craving for french toast this morning. So, I whipped up this quick and easy recipe..and I can guarantee you'll have everything on hand.  And, if you don't, then I guess you need to go fill your pantry with some of these basic items!  🙂

One of my favorite places in Nashville, TN (where I lived for 4 years) was the Pancake Pantry.  The last time we visited, I had their french toast and I loved the presentation so much that I took a picture of it with my cell phone.  I tried to replicate the look with my french toast.

This recipe fed the two of us...with one piece left over.  You will just need to adjust the amount of ingredients depending on how many you are feeding.

Printable Recipe

3 thick slices of bread
2 eggs, lightly beaten
⅔ cup milk
1 tablespoon ground cinnamon
1 tablespoon sugar
syrup, as desired
powdered sugar, as desired
butter, as desired

Preheat griddle and spray with noncooking spray.  Or, melt a tablespoon of butter in a large nonstick skillet.  Cut each bread slice into two triangular sections, discarding scraps.

Mix the eggs, milk, cinnamon and sugar in a small bowl.  Dip each section of bread into the bowl, coating both sides.  Place on griddle or skillet and cook for a couple of minutes on each side until done.

Arrange sections on a plate in a circular pattern (as shown). Dollop a ball of butter in the center of the slices, sprinkle with powdered sugar and drizzle with yummy syrup.

If you want to bring your french toast to a whole new level then substitute Coffeemate french vanilla creamer for the milk. Not only does it give it a richer flavor but it helps it crisp up better.

These look so good! We never would brave the line at the Pancake Pantry, but went on to breakfast at Noshville. I can't wait to try your crab cakes, they look incredible. I'm sure they have to be since the recipe comes from your mother in law!
