Horse Cupcakes from Hello! Cupcake

My friend, Stephanie, and I hosted a hat decorating party on Thursday. We sent out invitations to some of our girlfriends to come over and decorate hats to wear to ladies day at the Arlington horse races on September 6th. Stephanie and I made a bunch of food for this party, and it was my chance to finally make some cupcakes from my Hello! Cupcake book.

These horse cupcakes took a little bit of time, but they really were not that hard. The biggest frustration was that I could not find white circus peanuts anywhere! Heck, I could hardly find the orange ones until Ben called me while I was out on my desperate search (the day of the party) and told me he remembered seeing them at Walgreens. He was right! They had ONE bag left and that was all I needed. Phew!
I just used a fudge chocolate boxed cake mix since it was going to be so much work to put together the cupcakes. To create the horses, use circus peanuts (head), pretzels (tail), wafer cookies (neck), melted chocolate wafers, and more! To get the exact recipe, pick up your copy of Hello! Cupcake. There are very cute ideas in this book!!!
I'll post more of the food we made for the party later this weekend or next week. And, maybe in a few weeks I'll even let you in on some of the horse racing photos when we wear our gorgeous derby hats! Here's a sneak peek:
