Y'all.  I can be OBSESSED with all desserts with the chocolate peanut butter combination.  And when you place the combo in a cookie bar?  I'm all in.  Cookie crumbs, peanut butter cups, chocolate?  Yes, yes, yes!

These Peanut Butter Cup Blondies definitely satisfy my peanut butter chocolate and cookie cravings.  They are so simple to make and require very little prep.

Tips for Making Peanut Butter Cup Blondies

A few tips for making these Peanut Butter Cup Blondies:

  • Refrigerate or quickly freeze the peanut butter cups before chopping them.  This will help them from melting and making a mess while chopping.
  • Line your pan with foil and lightly grease with nonstick spray.  This creates very easy clean up.
  • Save some of your chopped peanut butter cups to sprinkle over top the batter before baking.
  • Bake until the bars are set in the middle.  These are gooey bars, but if you want them less gooey you can bake a little longer -- just watch the sides from too much browning!

How to Make Peanut Butter Cup Blondies

INGREDIENTS:

  • 1 cup brown sugar
  • 6 tablespoons butter
  • ⅓ cup peanut butter
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup chopped peanut butter cups

DIRECTIONS:

  • Preheat oven to 350°F.  Line 8x8-inch pan with foil and lightly spray.
  • Mix together sugar, butter and peanut butter.  Add egg and vanilla.  Beat for 2 minutes.
  • Whisk together flour, baking powder and salt.  Mix into wet batter and fold in peanut butter cups.
  • Spread batter evenly into pan.
  • Bake 25 minutes or until set in middle.

Ingredients

  • 1 cup brown sugar
  • 6 tablespoons unsalted butter at room temperature
  • ⅓ cup peanut butter creamy or crunchy
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup chopped peanut butter cups

Instructions

  • Preheat oven to 350°F. 
  • Line bottom and sides of 8x8-inch pan with foil. Lightly grease with nonstick spray; set aside.
  • In a large mixing bowl, beat the brown sugar, butter and peanut butter for one minute, until smooth.  Add the egg and vanilla.  Beat on high for 2 minutes.
  • In a small bowl, whisk together the flour, baking powder and salt.  Gently mix into the wet batter on low speed.  Fold in ¾ cup of the chopped peanut butter cups.
  • Pour the batter into the prepared pan and use a spatula to spread evenly.  Sprinkle the rest of chopped peanut cups over top.
  • Bake 25 minutes or until set in the middle.  Remove from oven and cool before slicing and serving.

Notes

Recipe Tip:  Place peanut butter cups in freezer or fridge so they are cold and do not melt while chopping.
