Quick Fix: Buffalo Chicken Mini Sandwiches

Buffalo Chicken Mini Sandwiches

This was the main plate I served at our Super Bowl party last Sunday.  I made these sandwiches into mini-sandwiches to multiply the serving size, and it worked out great!  With all of the other food served, mini-sandwiches were the perfect portion size.  These were a hit!  Very tasty and I love the buffalo hot sauce flavor.

If you do not want to have them assembled on a plate, you can also keep the meat in a slow-cooker, plate the buns next to the slow-cooker and let your guests assemble their own sandwiches.

Buffalo Chicken Party Sandwiches

1 Rotisserie Chicken from Grocery Store
¾ to 1 cup Buffalo Hot Sauce
¼ to ½ cup water
16 - 20 mini-buns (I used sausage buns cut in half)

Shred up chicken in medium sauce pan and combine with hot sauce and water.  Cook on medium heat until heated through.  Add more hot sauce to taste.  Serve on mini-buns of choice.

    These look delicious! I might try just tossing boneless chicken breasts in the crock pot for a few hours and then shredding those up with the sauce. Can't wait to try it!
