Stuffed Acorn Squash

I like this dish because it's fast and easy, and you can experiment with different varieties. It's also healthy! Some people serve as a side dish, while I serve most of the time as the main dish, depending on the filling. It's up to you! If you've never had squash and feel weary about trying it, I recommend getting over that bump and giving it a shot. You'll be surprised!

This recipe uses only one acorn squash so only serves two.

Preheat oven to 350. Take one acorn squash, halve it and seed it. Place it cut side up in a microwave-safe baking dish and cover loosely with plastic wrap. Microwave on high for 10-15 minutes or until fork-tender. Meanwhile, prepare your desired filling. I usually fill with a flavored rice with diced chicken and cheese to top. Once the acorn squash is done in the microwave, fill it with the rice, top with shredded cheese and bake in a 350 degree oven for 5-7 minutes or until cheese is melted.
