What I Had for Dinner Last Night

Loaded Baked Potato SoupAfter enjoying this for dinner last night, I realized I needed to remind you of it's goodness, or greatness(!) if I dare.  Do you remember the Loaded Baked Potato Soup? My picture was horrendous, so I may have scared you away (yes, I kept it there but also added an updated one).  It's one of our favorites during cooler weather, and even though it's not quite cool here yet in California, it was nice to feast on this tonight to remind ourselves of our former home in Illinois.

One of the great things about this soup is that it is a quick meal to put together.  You can have this ready in just over 30 minutes.  Each time I make it, the easier it gets.  I love that about recipes.  Last night, I had only an hour to get dinner made, eat it and put the little one to bed before heading off to Women's Bible Study.  Yes, I might have been a few minutes late to Bible study, but I couldn't help and enjoy every little lick of my spoon!

I also updated the title of this soup from Idaho Baked Potato Soup to Loaded Baked Potato Soup because I think it defines it more clearly.  With bacon, sour cream, and cheese this really is reminiscent of eating a loaded baked potato...one of my favorite foods!  Enjoy!

    This recipe was soooo good. Made it for my husbands family and they loved it. I added some broccoli to it but I think it would have been just as good without it.

    I am so glad you posted this! I had starred this recipe when you orginally posted it, but it has since been buried in the archives and I had forgotten all about it. I can't wait to make this soon!
