Broccoli and Bacon Spaghetti with Mango Brown Butter Sauce
A "mangover" to traditional spaghetti, this broccoli and bacon spaghetti is tossed with a delicious and easy brown butter sauce with a fruity mango twist!
1head broccoli, washed, dried and chopped into small florets
¼cupwater
½cupunsalted butter
1large mangopeeled, pitted and diced
2teaspoonsbrown sugar
1tablespoongrated Parmesan cheese
¼teaspoonsalt
6ouncesdry spaghetti
Additional salt & pepper, to taste
Instructions
In a large nonstick skillet, cook the bacon over medium heat until crispy, about 8-10 minutes. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate. Discard bacon fat, reserving about 3 tablespoons in the skillet.
Add the broccoli and water to the skillet. Cover and steam for 5-6 minutes.
While the broccoli is steaming, melt the butter in a medium nonstick skillet over medium heat. Continue cooking, without stirring, for 6 to 7 more minutes, until the butter is lightly browned and gives off a nutty aroma. Transfer to a blender with the mango, brown sugar, Parmesan and salt. Process until smooth.
Meanwhile, in a large pot, boil the pasta according to the package directions. Drain and toss into the skillet with the broccoli. Pour the brown butter mango sauce over top and toss to coat. Sprinkle with bacon pieces. Season with salt and pepper, to taste. Serve immediately.
