Apple Onion and Sage Breakfast Sausage

This homemade sage breakfast sausage recipe got us through our Whole30 compliant diet a few months ago, and we still make it weekly!

  • 1 lb ground pork
  • 1 egg lightly beaten
  • 1/2 sweet onion peeled and shredded
  • 1 apple - any variety shredded (no need to peel)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3/4 tsp ground sage
  • oil or ghee for cooking


  • Preheat nonstick skillet with oil or ghee over medium high heat.
  • While skillet is preheating, combine all ingredients in a large bowl.  Working in batches (6-8 patties at a time), scoop medium sized patties into skillet and lightly press to evenly form sausages.  Cook over medium to medium-high heat for 3-4 minutes on each side until internal temperature is 165 F.  Wipe skillet clean and repeat with rest of mixture, heating more oil as necessary.
  • Makes about 16 small patties.
