This homemade sage breakfast sausage recipe got us through our Whole30 compliant diet a few months ago, and we still make it weekly!
1/2sweet onionpeeled and shredded
1apple - any varietyshredded (no need to peel)
oil or ghee for cooking
Preheat nonstick skillet with oil or ghee over medium high heat.
While skillet is preheating, combine all ingredients in a large bowl. Working in batches (6-8 patties at a time), scoop medium sized patties into skillet and lightly press to evenly form sausages. Cook over medium to medium-high heat for 3-4 minutes on each side until internal temperature is 165 F. Wipe skillet clean and repeat with rest of mixture, heating more oil as necessary.
