Ingredients
3cupsall-purpose flour
2teaspoonsbaking soda
1teaspoonsalt
1teaspoonground cinnamon
1teaspoonground cloves
1teaspoonground ginger
1cupunsulphured molasses
2/3cupvegetable oil, or canola oil
1/2cupgranulated sugar, plus additional for dusting
2largeeggs
1teaspoonvanilla extract
1cupboiling water
Instructions
Preheat oven to 350°F. Line two 12-count muffin pans with paper liners; set aside.
In a medium bowl, whisk together flour, baking soda, salt, cinnamon, cloves, and ginger. In a large bowl, beat the molasses, oil, sugar, eggs and vanilla. Add the dry ingredients and gently mix. Add boiling water; stir to combine.
Divide batter into muffins cups, filling about 2/3rds full. Dust the tops with sugar. Bake 20 minutes, until toothpick inserted comes out clean.
