Ingredients
3large eggs
1 ¾cupsgranulated sugar
1cupvegetable oil
2cupsall-purpose flour
1teaspoonground cinnamon
1teaspoonsalt
1teaspoonbaking soda
2cupspeeled, cored, and finely diced tart apples (we prefer Granny Smith), about 2 medium apples
Instructions
Preheat oven 350°F. Grease 9x13 metal pan.
In large bowl, whisk eggs, sugar and oil until light.
Stir in flour, cinnamon, salt and baking soda with a wooden spoon. Gently fold in apples.
Spread batter evenly in prepared pan. Bake 35 to 45 minutes, until top is golden and crackly and passes toothpick test.
Let cool and cut into squares.

Traditionally, we eat these at room temperature as bars, but you can serve them warm, cold or at room temperature.
Try them right out of the oven topped with a scoop of ice cream.
A dusting of powdered sugar makes them really pretty!
