Ingredients
1cupcreamy natural peanut butter
½cuphoney
1 ½cupsrolled quick oats(not instant)
½cupvanilla protein powder(I use Orgain plant-based protein powder)
PinchSalt
½cupsemi-sweet chocolate chips
Instructions
In a large bowl, mix the peanut butter, honey, oats, protein powder and salt until just combined. Fold in the chocolate chips until evenly distributed.
Roll dough into about 24 balls (about 1 ½ tablespoons each). Place on a wax paper lined baking sheet. Refrigerate 10 minutes. Transfer to an airtight container and store in the fridge for up to 3 weeks.
Notes
To make double chocolate energy bars, stir in ½ cup unsweetened cocoa powder to the base.
Other optional variations: mini M&Ms, nuts, raisins, cranberries, chia seeds, coconut shreds, flaxseed, white chocolate chips.
