Last week I gave you my recipe for sliced pretzel bread and told you I would share my favorite use for it. This is it! I take two pieces of the bread and stick whatever slices of cheese I want in the middle (pictured here is Cheddar and Gouda), rub the outside with olive oil and then grill the sandwich in my Panini press. Done within minutes!
Just because I used my Panini press doesn't mean you can't whip up a mean grilled cheese sandwich in your skillet instead. This, ladies and gentlemen, is what I refer to as the best quick and kid-friendly lunch ever. Add some veggies and fruit on the side to make up for the nutritional shortfall, but I can guarantee it is not falling short of taste!
How about serving it up with some creamy tomato soup? Ahhhh... I'm just reeling you in, aren't I?

Grilled Cheese Panini on Pretzel Bread
Ingredients
- 1 loaf sliced pretzel bread
- sliced cheese (your favorite kind)
- olive oil
Instructions
- Preheat a Panini press. Match slices of bread into pairs by size. Sandwich two or three slices of cheese between each bread pair, then rub the outside of the bread with olive oil. Grill one or two at a time in the Panini press until the bread is golden crispy and the cheese is melted.
