Crispy Apple ColeslawAre you ready for some barbecue?  Tell me, what complements your favorite BBQ recipes?  For me, it's a good ol' refreshing coleslaw to cool my breath from those dripping red-hot ribs.  Rarely do I like any of the slaw that is served in the restaurants.  But, give me some freshly made at home and I am all over it.

There are so many variations to coleslaw that I could share, but we will start with this basic version that is loosely based off another type of salad my mom makes.  Aside from the crispy shreds of cabbage, the crunchiness of the apples and almonds sets this to another level.  You can add more or less of each ingredient to your liking, and even add in others not listed below, such as dried cranberries, shredded carrots, Dijon mustard, different seasonings, etc.  So start out with this formula and see where it takes you!

Crunchy Apple Slaw

Printable Recipe

Yield: 8-10 servings

½ cup salad dressing (such as Miracle Whip)
1 Tablespoon granulated sugar
2 Tablespoons brown sugar
1 Tablespoon apple cider vinegar
1 Tablespoon lemon juice
½ green cabbage, shredded
1 red apple (Braeburn preferred), unpeeled and diced
1 green apple (Granny Smith preferred), unpeeled and diced
1 Tablespoons chopped green onions
¼ cup sliced almonds

Mix together the salad dressing, sugars, vinegar and lemon juice in a large bowl.  Add the remaining ingredients and toss to coat.  Cover and chill before serving.
