Chex Cereal Recipes

The most recent package they sent included a recipe for these Football Chex Cereal Treat Bars.  I knew the boys and I had to make these right away!  They were already excited to receive a football themed mailer because football is currently their life.  I was excited for the recipe.

Football Chex Cereal Treat Bars

We made these cereal treat bars and shared them with neighbor kids as they came to play during the week.  Simon was a little bothered by the sticky-ness of the marshmallows, but once they cooled he gobbled them up.  He's my little tactile sensitive kiddo, so wasn't surprised by this at all.

I cut these much smaller than the original recipe in order to spread the servings amount.  The original recipe cuts into 12 bars, but my recipe below will instruct to cut into 20 bars (4 rows by 5 rows).  You can decide how many bars to cut.

Course: Dessert
Keyword: Chex Cereal
Servings: 20 bars

Ingredients

  • 8 cups Rice Chex cereal
  • ¼ cup unsalted butter
  • 1 bag (10 oz.) large marshmallows
  • 2 cups semi-sweet chocolate chips
  • White icing for decoration

Instructions

  • Grease a 9x13-inch baking dish with cooking spray; set aside.  Pour cereal into a large mixing bowl; set aside.
  • In a large pot, melt the butter over medium low heat.  Add the marshmallows and continue to heat over medium to medium low until completely melted, stirring frequently.
  • Immediately pour the marshmallow mixture over top of the cereal in the bowl and mix until evenly coated.  Press the mixture into the greased pan in an even layer.  (Use greased waxed paper to help press the mixture into the pan.)  Let cool 15 minutes.
  • Meanwhile, melt the chocolate chips in a medium sized microwave safe bowl -- 30 seconds at a time until melted.  Pour over the cooled cereal mixture and evenly spread.  (It will be a thin layer.)
  • Refrigerate for 30 minutes or until set.  Cut into bars, 4 rows by 5 rows.  Add decorative football stripes with white icing (optional).  Serve at room temperature.
