Ingredients
For the crumb:
1cupgranulated sugar
3cupsall purpose flour
1teaspoonbaking powder
¼teaspoonsalt
Zest of 1 lemon
1cupcold unsalted buttercut into small pieces
1egg
For the berries:
Juice of one lemon
4cupsfresh blueberries
½cupwhite sugar
4teaspoonscornstarch
Instructions
Preheat the oven to 375 F. Grease a 9×13 inch pan.
In a large bowl, stir together 1 cup sugar, 3 cups flour, and 1 teaspoon baking powder. Mix in salt and lemon zest. Use a fork or pastry cutter to blend in the butter and egg. Dough will be crumbly. Pat half of the dough into the prepared pan.
In a medium bowl, stir together the sugar, cornstarch and lemon juice. Gently mix in the blueberries. Sprinkle the blueberry mixture evenly over the crust. Crumble remaining dough over the berry layer.
Bake in the preheated oven for 45 minutes, or until the top is slightly browned. Cool completely before cutting into squares.
Notes
Can also serve warm out of the oven as a cobbler with ice cream.
