EASY MEXICAN CORN SALAD

Our easy Mexican corn salad is a favorite Mexican side dish! Perfect for taco nights, barbecues, picnics or any family meal.

Ingredients:

– ¼ cup mayonnaise – 2 cloves garlic  – 1 teaspoon salt – 1 teaspoon chili powder – 2 stalks green onion – 3 (15 oz) cans whole kernel corn, drained – Juice from 1 lime – 1 avocado , peeled and diced – 3 oz. Cotija cheese, finely crumbled  – 1 handful cilantro leaves , chopped

All of the ingredients are mixed together in a large bowl then refrigerated for about an hour to allow those flavors to blend.

GENERAL STEPS

In a large bowl, whisk together the mayonnaise, garlic, salt, and chili powder. Mix in the rest of the ingredients.
